Snow Man

I'm not much for recreating things out of cake but I couldn't resist building this snowman last Christmas for a client. Complete with gumpaste hat, he was filled with vanilla cake with candy cane buttercream and covered in fondant scarf. He serves close to 40 people so if you are looking for a centerpiece for a winter party, why not invite him?

Snowy Days

Well, I think now we all know what they mean by "Storm of the Century" as Big Bear Lake recieved close to (or over depending on who you believe) five feet of snow last week. And we also know the meaning of the words CABIN FEVER as many of us lost power for days (not hours, DAYS) and were forced into creative cookery and early nights because the sun still goes down pretty early this time of the year. Home Made Fluff
Growing up my favorite sandwich was peanut butter and fluff on white bread. When we decided to try some new treats in the beginning of January, imagine my surprise when, as we described whoopie pies to our customers, no one knew what fluff was. Maybe its a "back east" thing or something but its essentially marshmallow cream and when we ran out of it at the bakery, I found a recipe for it online. In the interest of being covered in white stuff, here's the recipe for this gooey, sweet confection. We combine it with other ingredients to make the creamy filling for our whoopie pies. Homemade Marshmallow Fluff
•3 egg whites
•2 cups light corn syrup
•1/2 tsp salt
•2 cups confectioner's sugar
•1 Tbsp vanilla extract
In a large bowl, combine egg whites, corn syrup and salt.
Mix with mixer on high speed for 10 minutes (or until thick).
Add in icing sugar. (you can use less)
Beat on low speed until well blended.
Add vanilla and mix until blended

Try it with peanut butter or even on ice cream. Mix can be frozen for later use. Should be refrigerated after making. Can be warmed slightly in the microwave.
